With the onset of rains the month of Saavan according to Hindu calendar begins. The beginning of Shravan Maas as we call it in Hindi begins, the Saavan Somvar where devotees of Lord Shiva fast every Monday of the month.
Fasting in India calls for making special food - Faryali or Farali - Food that contains no whole-grains and can be consumed during fasting for Gods in India.. Here is one such delicious recipe that you would want to try.You can make these delicious pancakes or chilas even when not fasting.

These yumm Savory pancakes are healthy, tasty and filling. And the Paneer filling gives the pancakes a refreshing twist.
Ingredients -
For Stuffing -
1/4 Cup Grated paneer
1/2 tsp - Red Chilli Powder
1/2 tsp Black pepper Powder
1 Green chilly finely Chopped
Some coriander leaves finely chopped
4-5 Cashews Roughly chopped
Salt to taste
Instructions - In a bowl add Grated Paneer, red chilly powder,black pepper, coriander leaves, green chillies and salt. Mix it well so that the spices are evenly distributed. Tada the stuffing is ready.
Sabudana Pancakes stuffed with cottage cheese served with curd-mint chutney.
For Batter -
1/2 Cup - Powdered Sabudana
1/2 Cup - Powdered Mordhan
1 tbsp - Crushed Peanuts
1 tbsp - Curd
1 1/2 Cup Water
1 Green chilly chopped
1 tbsp - Coriander leaves Chopped
1 tsp- Red chilli powder
1/2 tsp Jeera powder
Salt to taste
Oil/Ghee to pan fry
Instructions -
In a big bowl add the powdered Sabudanaand mordhan and mix. Now, add in the curd and water and make a lump free batter.
Once, everything is well mixed add the powdered peanuts, green chillies, coriander leaves,red chilly powder, jeera powder and salt. Whisk the batter so that there are no lumps of the spices in batter.
Now, heat up a non-stick pan or tawa and grease with some oil. Slowly pour in a ladle of batter and spread slightly. The batter will change color once cooked.
Once the batter changes color,ad some oil and slowly flip it with the help of a spatula. Cook the other side same way until the pancake is Golden Brown in color.
To serve place the pancake on a plate, and spread 2 spoonfuls of the stuffing over half of the pancake. Fold over the other half on the stuffing. Savour the delicious pancakes with chutney of your choice.
Pro-Tip : Slightly roast the peanuts before crushing them for that added flavour. Trust it makes a lot of difference.
