Pakodas - A fried snack originating from Indian subcontinent, which is specially very popular during monsoons. Hot pakodas and chai is the best combination during the rains. Pakodas/ pakodi /Bhaiji /Bhajiya whatever you call it , have a special place in our hearts.
Since we've done corn pakodas earlier, let us make my all time faves Pyaaz ke Pakode that can be enjoyed anytime of the year with some Chai.
Let's get cooking.
Onion Pakodas served with mint chutney and tomato ketchup.
Ingredients -
1 1/2 Cup Onions Thinly sliced and separated
1 1/2 Cup - Besan (Gram flour)
1 Green Chilly - Chopped
1 tsp - Coriander chopped
1 tsp - Ajwain
1 tsp - Fennel seeds (Saunf Powdered)
1 tsp - Coriander Powder
1 tsp - Red chilli Powder
A pinch of Heeng(asfotedia)
Oil to fry
Salt to taste
Instructions -
In a big bowl add 1 1/2 Cups Besan and 1 Cup Water and mix to make a lump free batter. Add all dry spices and give it a good mix. Make sure there no lumps of spices. Add chopped coriander leaves and chillies and mix again.
Final addition to the batter the thinly sliced onions, and around a tsp of warm oil taken from the oil for frying. Now scoop out small portions of batter in the kadhai to fry. Fry on medium-high heat occasionally stirring to turn them over.
They should be rich golden brown when done. Strain excess oil and serve hot. Sprinkle some chaat masala over for added tang. Serve with mint chutney and tomato ketchup or any dip of your choice.
Closer look at the Pyaaz Pakodas.
Pro - Tip : Add a tsp of hot oil to the batter just before frying and mix well before frying the Onion Pakodas, as it will will make the Pakodas crispy. Use a spoon to pour the batter or just go old school and use your hands..
This is a very quick and simple recipe by my Mother. sharing her recipes makes me so happy. I've cherished her handmade food my entire life and i've learnt so much from her. Whenever anything I make is appreciated I feel I've done her proud. Super happy to have had the training from the best, she amazes me with her skill even today.
