Raita - An Indian side dish made with yogurt, spices, herbs and vegetables. Made from curd/yogurt it is high in proteins and low in unhealthy fats which makes it perfect for summers.
Indian Summers are very hot and foods that have a cooling effect are a treat. Cucumber Raita is really popular in summers as it helps beat the heat. It can be served as a dip, salad or as a side accompaniment with the main course.
Cucumber Raita has very basic ingredients - Cucumber, yogurt and spices which makes it high in protein and low on fats and healthy.
Ingredients -
1 Cucumber Chopped/Grated
1 Cup Fresh Yogurt/Curd
1/2 tsp Black Salt
1/2 tsp Roasted Ground Cumin
A pinch - Red Chilli Powder
1/2 tsp Sugar/Honey
2 tbsp Water (Optional)
Instructions -
Take 1 cup yogurt in a mixing bowl and add 2 tbsp water,and whisk until it becomes lump free. Skip adding water if you like your raita extra thick. Now add sugar, black salt and cumin powder.
Now add in the chopped cucumber and mix it well. Sprinkle some red chilli powder and Tada...you are done.
Refrigerate for 30 minutes before eating. Skip this step if your curd is already cold.
Pro-Tip : Add 1/2 chopped green chilly and coriander leaves for extra flavour.
This raita has been my go to snack in summers. It accompanies most of my lunch and dinners throughout the year. You can skip the sugar and add honey instead for a healthier version of this yummy raita.
