Wholewheat Ajwain(Carom Seeds) Mathri


Mathri is one of the most popular North Indian snacks widely available at almost every sweet store. It is flaky and crunchy at the same time. Served with mango/lemon pickle or best had with a hot cup of tea. Even though it is easily available in the marketa, home made version of Mathri brings back a lot of childhood memories.


I promise you won't be able to stop at just one. Let's get cooking.

Please note a list of ingredients required to make this easy peasy snack.

  • 1 cup - Wholewheat Flour

  • 1/8 cup - Semolina ( Sooji/Rava)

  • 1/8 Cup - Ghee(Clarified Butter)

  • 1tbsp - Ajwain Seeds

  • 1 tbsp - Ajwain leaves chopped

  • Salt to taste

Oil to fry.


Steps to follow -


  • Mix all the ingredients and knead a semi soft dough. Cover the dough and let it rest for atleast 30 minutes.

  • After around 30 minutes divide the dough into two equal balls. Roll out the dough into a flattened chapati of approximately 5 mm thickness. Please refer to the picture below for thickness.



  • Cut the rolled out dough with the help of a cookie cutter or any round glass or bottle cap. You can also cut the dough into any desired shape. Traditionally the mathris are made in round shape. I have used a flower fondant cutter.


  • Cut the entire flattened dough into the desired shape, and remove any scraps. You can re- roll the leftover scraps and cut again. Repeat the process till no excess dough is left.



  • Once all the dough has been cut into the desired shape, heat some oil in a deep bottomed pan for frying.

  • Test the oil with a small ball of dough. It should bubble and float immediately.Add a no of Mathris into the pan to fry.



  • Fry the mathris at medium flame until they turn golden brown. Drain excess oil and carefully take them out. Cool them on a kitchen towel, once at room temperature they can be stored in an airtight container for a month.


This is how they should look. Let them cool before you savour these yum treats.
